Abstract
The level of food consumption of Indonesian people with a high glycemic index (GI) value, such as white rice, contributes to the increase in diabetes mellitus from year to year. In order to reduce the number of incidents, it is
necessary to have another source of staple ingredients to replace white rice. This study aims to measure the glycemic index value of Japanese rice tarabas (Oryza sativa subsp. Japonica), white rice (Oryza saiva L.) and brown rice (Oryza nivara) in male white rats’ (Rattus norvegicus) Wistar strain. In this study, 35 rats were grouped with a Completely Randomized Design, each divided into 5 groups. The test sample was given orally. Rice is made into flour and suspended into 1% Na-CMC with a dose of 1.18g (brown
rice), a dose of 1.17g (white rice), and a dose of 1.18g (tarabas rice). Positive control was given glucose dose of 0.9g + suspension of Na-CMC 1%. All these doses are for the 200g rats’. The negative control was given 1% Na-CMC
suspension. Measurement of the rats' blood glucose levels was carried out in the 0th minute (before treatment), and after giving the treatment for 2 hours at 30, 60,
90 and 120 minutes using a glucometer. The blood glucose levels obtained were then calculated the AUC and GI values and analyzed the data using the One way ANOVA test.
The results showed that the comparison ofthe average GI value of white rice (Oryza sativa L.) had a significant difference to Na-CMC, meanwhile, the average GI values of red rice (Oryza nivara) and tarabas rice (Oryza sativa subsp. japonica) were not significantly different from Na-CMC.Keywords: diabetes mellitus, AUC, IG
